Bellini Cocktail Recipie

Serves 4

2 ripe white peaches (peeled, halved and stones removed) or use good tinned peaches if you cannot be bothered with all of that

Maraschino liquer

Lemon juice

Ice cold Prosecco

Chilled Champagne flutes

 

Purée the peaches in a blender until it is completely smooth and put a tablespoon of this into the bottom of each glass.  Add a dash of lemon juice and maraschino liqueur, then top up with prosseco.
