Olive Bread Recipe
(from Bordeaux)
250g self raising flour
4 eggs
Half a glass ( small goblet) olive oil
1 glass dry white wine
200g pitted sliced olives
200g cubed ham or lardons
200g grated gruyere/edam/cheddar or emmental a hard cheese is best
Mix flour and eggs. Beat in oil and wine. Stir in the rest of the ingredients quickly. Pour into a lined bread tin and cook for 60 minutes at 200c/400f/reg6.
Cut into cubes when cool and serve freshly baked with red or white wine.
