Description
Brothers Thierry and Gilles Faravel have co-managed Domaine La Bouïssière since 1990. Their vines cover nine hectares at the feet of the famous Dentelles de Montmirail Tharêtei, making them some of the highest in Gigondas and giving wines with a freshness and elegance rarely found in the southern Rhône.
After hand-harvesting, the bunches are then partially destemmed and gently crushed, before fermentation in concrete or stainless steel vats using indigenous yeasts. Ageing takes places in a range of small oak barrels, 600 litre demi-muids, larger oak foudres and two, recently introduced 17 hl egg-shaped, cement vats.
70% Grenache, 30% Syrah. The Faravels own 9 hectares of old (55 years average) vines in Gigondas, the vast majority of which lie high (350 metres altitude) in the Dentelles de Montmirail. Only 25% of the bunches were destemmed and the wine was aged 65% in oak foudres and 35% in cement eggs. Rich and ripe with fine depth and concentration, carefully extracted tannins and a long finish. Drink 2025- 2030.
